Layton 'survivor' serves root beer Thr, May 2, 2002 By NANCY VAN VALKENBURG Standard-Examiner staff LAYTON -- The best buffet around may be the weekly spread in the Layton home of Neleh Dennis. Her family, friends, friends of friends and associates gather on Thursday night to watch the Layton 22-year-old on the CBS show "Survivor: Marquesas." And as television competitor Neleh survives on her wits and all of the island fare she can gather, current-day Neleh is surrounded by chips, dips, cocktail weenies, Crock Pot meatballs, cake, cookies, sandwiches and pastries. "Last week, we had 111 people," said her father, John Dennis. "I didn"t know them all personally. I think Neleh knew most of them. We invite our family and friends, and some of the friends bring friends, and last week I invited people from work. It"s by special invitation only." Dennis" contribution to the buffet was 10 gallons of his homemade root beer. "It went pretty fast," he said. "Next time, I"ll probably make 15 gallons." Next time will be tonight. The show airs at 7 p.m. on KUTV Channel 2. Last week, contestant Zoe was voted off the island. This week, Neleh competes with six others in hopes of remaining on the island for another week. "It"s a fun game to watch, and it"s fun to watch Neleh playing it," her father said. "Neleh has never had a vote cast against her yet. She has remained credible, honest and caring, but has shown that she"s certainly no dummy. She"s not a devious person, but she has gotten more assertive, making sure she stayed in the game. "At one point in time, I didn"t think she would make it this far. I"m just tickled that she has." The Dennis home can get pretty lively on Thursday nights. "You wouldn"t believe all the whooping, hollering and cheering every time something happens on the screen that is positive for Neleh," he said. "A couple times, I"ve thought the house might fall down." Dennis tries to remind himself that the party could end any week. "We"ll miss it when it"s over," he said. "I don"t know what we"ll do with our Thursday nights. Maybe we"ll have to make it a movie night." At this writing, it"s not over yet. For those who want to celebrate elsewhere, here is Dennis" secret recipe for homemade root beer, which we think should be called: "Root Beer for 111 or so of Neleh"s Closest Friends" 15 gallons water 15 pounds sugar Three 2-ounce bottles root beer extract 20-24 pounds of dry ice (8 pounds per 5 gallon batch, or 20 if you are making 15 gallons in one giant container) Mix the water, sugar and extract. For best results, let it sit overnight. (Oops -- well, it will still be pretty good if you start it tonight.) Divide the dry ice into four portions, then crack the ice in each portion into small pieces. About an hour and 15 minutes before serving, add the first portion of dry ice. Continue adding ice portions at 15 minute intervals, allowing the gasses from the ice to fully carbonate the beverage. (Expect the mixture to bubble and release something that looks like a low fog.) Makes 15 gallons.
